Cacao, goji berries and spelt cookies

Ingredients

1 cup of spelt flour

1 cup of spelt flakes

1/3 cup of goji berries

1/3 cup raw honey

1/2 teaspoon of baking powder

1/2 cup of rice bran oil

1/2 cup of cacao nibs

Sesame seeds to 'garnish'
Method
Sift the spelt flour and baking powder.
Stir in the flakes, cacao nibs and goji berries.
Mix in the honey and the oil (tip: if you use the same measuring cup as you did for the oil, the honey will slip right out!)
The mix will look quite wet - but that's ok.
Use a teaspoon to roll out small balls of the mixture then flatten with a fork.
Sprinkle sesame seeds over the top.
Bake in an 180 degree oven for about 10 minutes - they will appear soft, but will harden up as they cool (don't be tempted to over cook or put them back in the oven!)
