Cacao quinoa pudding
½ cup chia seeds
½ cup quinoa
1 cup of rice milk
1/2 teaspoon of coconut oil
2-3 teaspoons of cacao
Fresh berries, about a cup
Agave to sweeten
Crushed raw nuts to serve (almonds, Brazil nuts and walnuts all work well)
Place quinoa, chia seeds and rice milk in a saucepan and bring to the boil.
Stir in the fresh berries and reduce down to a simmer until all liquid is absorbed and quinoa is tender.
Stir through cacao and coconut oil and have a taste. Depending on the sweetness of the berries, you may need to add a little agave to sweeten.
Top with crushed nuts for extra fibre and a flavour hit!
Can be served warm or cold.
