Ingredients (serves 4) 

  • 8 eggs

  • 1/2 chopped brown onion

  • 1/2 zuchinni chopped

  • 10 cherry tomatoes, quartered

  • 1 garlic clove, minced

  • 5 button mushrooms sliced

  • 50g goat's cheese

  • Handful of fresh continental parsley chopped

  • Himalayan Salt & ground black pepper

  • Chilli flakes to taste (optional)



Preheat oven to 180 degrees. 160 fan forced oven.

Whizz eggs in bowl until light and fluffy

Transfer egg mixture to oven proof dish

Add the rest of the ingredients into the dish (egg mixture should now be half-way to three-quarters up the side of the dish)

Cook in oven for 20 mins or until mixture has set and skewer comes out clean


Serve for breakfast by itself or with baby spinach leaves or combine with a crunchy salad for lunch!
